A Lesson in Care: Roast Chicken

We live in a selfish and narcissistic world, where genuine acts of service come by rare.

We’re always thinking about what we need, what we want, and what we can get out of a situation.

When was the last time you hit “pause” and asked another person these questions:
Are you hungry?
Can I help you today?
What can I do for you?

One of my favorite ways to show someone I care about them is to prepare poultry. It’s simple, but no other dish comes with comfort, such as a basic roast chicken. Julia Child judges the quality of a cook by this dish. I judge the quality of a person by how they roast chicken.

Spatchcock.
Marinate.
Roast.

When done well, you can carve the chicken effortlessly and serve your loved one first. Just don’t forget to ask— dark or white meat?
